It is time for us to go our separate ways.

I sometimes think that your effect on me is a figment of my imagination, but after many cheese-filled meals over the past few weeks, I’ve realized that to my body, lactose is very real - and really indigestable.

So this is goodbye: Cheddar, Monterey Jack, Parmesan, Gruyere, Manchego, Boucheron, Mozzarella, Asiago, Riccota, and Ricotta Salata (just to name my favorites). You’ve been with me on so many occasions. With only a stack of tortillas to keep you company, you’ve given my refrigerator a reason to stay cold, my non-stick pan a reason to warm up, and made my grater the #1 used piece of equipment in my kitchen (he’s gonna hate to lose the title).

It’s been super fun, but also super gas-y - and I need to stop feeling like shit all the time.
